After I won this game, why didn’t I move above my opponent on the 19x19 ladder? Am I misunderstanding something?

You probably did. You’re higher now than you were when the game started. This game finished a week ago and your opponent has won 4 more ladder games since then, so it’s hard to say for sure.
He only jumped up to his current rank 2 days ago after this win
You are correctly above yuri, your most recent ladder victory, so without access to server logs, it all seems normal.
