I was wondering if the rating graph can be update so that it only displays rating post rating adjustment.
The reason for this is that any growth is visually obscured by the big jump associated with the rating adjustment.
Another option would be to choose timeframe over which users can choose to display their rating.

hmm possibly, but you should know that you can zoom in and out and pan and scroll that rating graph.
You should apply zooming and panning to the x-axis only. Define the limits of the y-axis as the min/max visible value. That would alleviate the issue at least somewhat 
thats true zoom largely solves the problem.
