I understand AI games are no longer ranked, but what about games against other humans? What determines when these games are ranked? Is this something players choose, since I can’t find any settings for ranked or unranked games?

If you use auto-match it will be ranked.

I would add that, to be ranked, the game should be played on a regular board size (19,13 or 9) and the komi should not be customized.
