Is there a way to set up a custom live tournament such that the rounds occur on separate days? I’m interested in simulating league play for a private group. For example, we could use the round robin format and have one round every Saturday for 7 weeks.

We’ll have to look at the outside org thing, could work. We’re also considering using leago.gg. Since we have a group on OGS, would be nice if we could just use the create tournament on the group page. Seems like the only thing you’d need to function as a league control of when the rounds take place.
There is the create tournament record. I’m not sure exactly what that does and how it works, so don’t know if that could handle our needs.

This would be a great feature. You could sort of approximate it by nominating someone to pause their game at the end and only unpause to complete it a week later, when it’s time to start the next round. But you’d have to be very careful to not accidentally finish the round early. And if that nobody from the game shows up to unpause, you would need to ask a moderator for help.
By the way, live round-robin gets you a bunch of simultaneous games so it’s kind of crazy. McMahon might be what you’re looking for; that gets you one game at a time and a fixed number of rounds.
Unfortunate that R-R is simultaneous games. I suppose Swiss would work similarly to McMahon, but the problem with those formats is they don’t allow every pair of members to play a match.
McMahon usually uses a small number of rounds; 3 seems common on OGS correspondence tournaments. Is it possible to set a larger number that would be needed for a R-R? What kind of pairings would result? A bunch of rematches, or would it trick the system and force rounds between all the players?
