If I understand the rules of the pong simulation correctly, there is no possible way that either side can ever change the entire board to one color - the smaller an area of color is, the more times per second the ball will bounce, etc

What confuses me is - how come black is always ahead in points?

Yeah, my first run ended in a loop where the two balls were vibrating madly back and forth against each other in paired confined spaces. But (re tonybe’s question) I’ve certainly seen the lead change sides several times.
